2 lbs. ground beef (can substitute 1 lb. blue and gold sausage for 1 lb. ground beef), browned and crumbled
1- 20 oz can of crushed tomatoes
1 can tomato paste
2 small cans of tomato sauce
3 Tablespoons minced garlic
1 small onion, diced
2 Tablespoons dry basil
2 Tablespoons Italian seasoning
Salt and pepper to taste
1- 24 oz container of cottage cheese
Shredded Parmesan, Mozzarella, and Cheddar Cheese
1 Package lasagna noodles

In large pot. Brown meat and drain. Add onion and garlic to meat and cook until onion is soft. Add crushed tomatoes, tomato paste, tomato sauce, spices, salt, and pepper. Simmer for 1 hour or longer. (Meme says the longer the better). Add water as needed to keep the sauce from becoming too thick.

Meanwhile cook noodles in water with two tablespoons of olive oil added.

Begin layering with about 1 cup of sauce on the bottom of a 9x13 pan. Place one layer of noodles onto sauce, add cottage cheese, sauce, and sprinkle lightly with shredded cheeses. Continue to layer until pan is full leaving at least 1/2 inch from top of pan to keep from bubbling over during cooking. This is usually 3-4 layers deep. Top layer should only be sauce and cheeses. (No cottage cheese). Bake for approximately 1 hour in a 350º oven or until you see bubbles around the edges. Let set for 30 minutes before eating to make it easier to slice. Be sure to save some for the next day. It always tastes better on day two. Serve with homemade French bread and garlic butter.

If you have any noodles, sauce, and cheese left layer in another pan. This freezes well for a quick meal.
