¼ c butter
¼ c flour
1 med onion chopped
1 green pepper, chopped
½ c celery
4 cl garlic
2 c seafood stock
1 tbsp Cajun seasoning (see recipe)
1 tbsp paprika
½ tsp salt
½ tsp celery seeds
16 oz seafood (shrimp, crawfish, crab, lobster)
¼ c fresh parsley

Directions:
Directions:
1. In heavy pot at medium low heat, butter and flour, stirring till starts to turn gold.
2. Increase to medium, add onions, pepper and celery. Cook 4-5 minutes then add garlic until just fragrant.
3. Whisk in stock till smooth and add spices, cook till thickened 10-15 min.
4. Stir in seafood and heat through. Serve on rice.
