1 lb dried white cannellini beans
8 c water
4 tbsp olive oil
8 oz pancetta - cubed
1 med onion chopped
2 cl garlic
4 c chicken stock divided
2 sprigs rosemary
½ tsp salt
½ tsp pepper
¼ c roasted red pepper - chopped
2 tsp Creole seasoning
4 firm fish filets
8 oz cherry tomatoes
1 lemon sliced

Directions:
1. Place beans in water, soak overnight
2. Preheat oven 375º
3. Heat 2 tbsp oil on medium, add pancetta, onion and garlic. Stir till pancetta is crispy.
4. Add beans, 3 c stock rosemary, salt and pepper.
4, Cover loosely with foil and bake 1½ hours adding up to 1 c remaining stock as needed.
5. Discard rosemary, stir in red pepper, creole seasoning tomatoes, and lemons.
6. Drizzle with oil and bake uncovered 15 min. Let cool 10 min prior to serving.
