3 cups saltine crackers, crushed finely
1-16 oz. Boneless, skinless chicken breast
½ cup red hot sauce 4 hamburger buns
½ cup water 4 lettuce leaves
2 large eggs, beaten 4 slices onion
1 cup flour 4 slices tomato
2 T. Cayenne pepper sliced dill pickles
1 tsp. Black pepper mayo-mustard
1 tsp. Onion powder ¼ tsp. Garlic powder
1 tsp. Paprika frying oil, about 4 cups

In a shallow flat dish combine flour and seasonings. In another shallow flat dish mix together hot sauce, beaten egg and water. 2 cups finely crushed crackers (about one single tall packet) in shallow dish.
Cut chicken breasts into 4 pieces. Using a quart size ziplock bag pound out each piece with a meat tenderizer. Dip each piec in egg wash then flour, then egg wash, then crackers. Place on wax paper lined cookie sheet. Freee for 1 hout. Prepare deep fryer to 375º. Prepare condiments. Fry each pattie for 6 minutes turning once. Meanwhile toast and prepare buns.
