2 lbs. red or yellow potatoes
2 Tbsps. olive oil
1 tsp. garlic powder
3 Tbsps. fresh herbs, chopped
(rosemary, parsley, thyme basil)
½ tsp. paprika
salt & pepper to taste

Directions:
Directions:
Preheat oven.
Scrub potatoes (do not peel). Dice into 1" cubes
Soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potatoes). Drain and dry potatoes, if required.
Toss potatoes, olive oil, herbs and seasonings.
Place on a baking sheet and bake until browned and tender.

Oven temperatures and cook times:

350ºF - 45-50 minutes;
375 F - 35-40 minutes;
400 F - 30 minutes;
425 F - 20-25 minutes.
