Grape Butter Recipe

1 gallon grapes
1/4 cup water
honey, up to 3/4 cup

Directions:
Directions:
Place the grapes and water in a large pot, then heat to medium-high and mash the grapes..
Continue to cook as mixture thickens, stirring frequently, for about 30 minutes.
Put 2 cups of cooked grapes into a blender and blend at medium speed for 30 - 45 seconds.
Pour into a wire mesh strainer and swirl a ladle over the mixture to work it through.
Continue until all of the cooked grapes have been strained.
Return pulp to pot and cook over medium-low heat for 2-3 hours, stirring frequently.
You may need more cooking time depending on the amount of juice your grapes hold.
When product is quite thick place a drop of grape butter on a frozen plate
If you get a ring of fluid around grape butter drop you need to continue to cook.
Repeat test until no liquid ring appears.
Ladle the butter into clean, hot sterile jars leaving 1/2-inch head space.
Seal and process in a boiling water bath for 10 minutes.
