Pastry Dough

1 cup cold water
1 egg, slightly beaten
1/2 tablespoon sugar
1/2 teaspoon salt
1/2 tablespoon oil
3 1/4 cups flour

Filling
8 oz ground pork or beef (or combo of two)
1 small onion, grated
1 tablespoon sour cream
1/2 teaspoon salt

6 tablespoons oil

Directions:
To make the dough, place water in a large bowl and add egg, sugar, salt and oil. Gradually add flour and mix into a firm dough.

Knead the dough on a floured work surface for about five minutes, then cover with plastic wrap and let sit for about 20 minutes.

Mix filling ingredients.

Divide the dough into 6 pieces and roll out onto a floured work surface as thinly as you can, until its about 9 inches in diameter. Place 2 heaping tablespoons onto the circle and spread it thinly. Leave about a 1 inch border around the edge.

Fold the circle in half (with filling on the inside, obvs.) and pinch the edges together to make a half moon turnover.

Heat the oil in a large frying pan and fry the chebureky 1-2 at a time over medium-high heat, about 3 minutes per side. Lower the heat if you see them browning too fast.

Serve immediately!
