5-ounces frozen spinach, chopped
½ teaspoon olive oil
2 tablespoons salted butter
1 small onion, diced
2 tablespoons all-purpose flour
4-ounces green chilies, chopped
1 cup heavy cream
1.5-ounces cream cheese
32-ounces Velveeta Mexican cheese
½ teaspoon paprika
1 teaspoon kosher salt, or to taste
2 teaspoons black pepper
1 tablespoon granulated sugar
½ cup finely chopped fresh cilantro leaves

Directions:

1). Thaw the spinach and drain well. Heat the olive oil in a pan, add the chopped spinach and cook until wilted. Remove from the heat and set aside.

2). In a medium saucepan, heat the butter. Once melted, add the onion and cook until it's translucent. Add the flour and whisk until the mixture turns an almond colored. Add the spinach and green chilies and stir to combine. Gradually add the heavy cream and bring to a simmer, whisking constantly. Reduce the heat to medium-low.

3). Gradually add the Velveeta and cream cheese, stirring occasionally until it's melted. Once melted, add the paprika, salt, pepper and sugar and stir to combine. Stir in the cilantro and serve.
