11/2 lb pork tenderloin cut into medallions
1 medium onion chopped
1/2 poblano pepper diced
5 chipotle in adobe sauce diced seeded and chopped
4 garlic cloves roughly chopped
1/4 c lime juice
2 t cumin
1t oregano
smoked paprika
1 4oz can tomato paste
4 T red wine vinegar
3 T water optional
4-6 oz beer
1 8 oz. tomato sauce

1. bag pork
2. combine onion and pepper in a baggie
2. combine all other ingredients in a gallon size baggie
3. Freeze in one gallon size bag

Thaw in refrigerator. Brown tenderloin in a medium sauce pan with 1 T olive oil. Set aside. Sauté onion and pepper in 1 T olive oil. Add sauce bag ingredients and simmer until alcohol is cooked out. (about 5 minutes) Return pork and heat through.

This recipe was inspired by a meal we had at the Starlight Café in Terligua, Texas when we were camping in our RV and hiking in Big Bend National Park. It has deep smoky Texas flavors and reminds me of the Chihuahuan Dessert.

Its pretty spicy hot. Be warned.
