1 stick butter
1 egg
¼ tsp baking powder
1 c sugar
1 c all-purpose flour
1 tsp almond flavoring
1½ c coarsely chopped apples

Cinnamon Mixture
1 c sugar
½ tsp cinnamon

Directions:
Directions:
Preheat oven to 350º.

Combine 1 cup with ½ tsp cinnamon in small bowl; set aside.

Peel, core, and coarsely chop apples (firm apple is better). Prepare enough apple to cover the bottom of the pan you will be using and have a layer of apples 1-2" thick. In a loaf or deep cake pan, bake apples until soft. Remove from oven.

Sprinkle apples with cinnamon mixture to coat well.

In bowl of electric mixer, cream remaining ingredients together. Pour batter over the apples and bake at 350º until cake tests done.
