Ingredients: 2 c. +2 T. all purpose flour 4 1/2 T corn starch 2T unsweetened cocoa powder 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 3/4 c. butter, at room temperature 1 1/2 sugar 3 eggs, room temperature 1 1/4 c. sour cream 1 T. vanilla 1 1/2 T. green liquid food coloring
Frosting: 12 oz. cream cheese 6 T. butter 4 c. powdered sugar 2-3 T whipping cream (or milk) 1/2 tsp. vanilla

Directions:Preheat oven to 350 degrees. Line 24 muffin tins with paper liners. In mixing bowl, combine flour, corn starch, cocoa powder, baking powder, baking soda, and salt. In another large bowl, beat butter and sugar until light and creamy. Add eggs, one at a time, beating well between each addition. Mix in the sour cream, vanilla and food coloring. Mix in the flour until just combined, scraping the sides of the bowl as needed. Bake 15-18 mins. or util toothpick comes out clean. Cool completely before frosting.
For frosting, mix cream cheese and butter. When soft, add powdered sugar and vanilla and enough cream or milk for desired consistency. Garnish cupcakes with sprinkles and gold chocolate coins. |

Notes: Lots of story here. These aren't like any other cupcake I ever made - much more dense. I wanted really green cupcakes for St. Patrick's Day and boy - that's what I got! These really, truly are green. I did not use the cream cheese frosting - made a regular butter frosting. These were just what I wanted but they are not just what you would expect; look at the different ingredients from a regular cupcake. But they are just what they are advertised to be, faith and begorra!.
