Ingredients: Dough: 7 ½ C flour 1 ½ tsp baking soda 1 ½ tsp salt 3 C sugar 1 ½ c buttermilk 1 ½ tsp vanilla 1 ½ C shortening 3 eggs
Raisin mixture: 6 C raisins 1 C water 1 C sugar 2 Tbsp butter 2 Tbsp lemon juice 1 tsp salt 4 Tbsp corn starch 1 C orange juice 2 Tbsp orange rind (optional)

Directions:With a mixer cream together sugar, shortening, eggs and vanilla. Mix in remaining ingredients. Chill dough for several hours. I make it the night before I plan on baking the cookies. Cold dough makes for easy rolling. Use a large round cookie cutter. In a medium saucepan whisk sugar and corn starch together. Stir in water, orange juice and lemon juice. Cook over medium heat. When sugar is completely dissolved add in the raisins and butter. If using peel add last. Cook till sauce has thickened. Remove from heat and let cool. I do this the night before also. Preheat oven to 375 degrees Divide up dough roll out about ½ inch thick and cut with the large cookie cutter. Place 1 tsp of raisin mixture in center of cut dough. Fold in half seal edge. Place on greased cookie sheet brush with milk and sprinkle sugar over tops of dough. Bake for 12-15 minutes. Bottoms should be golden and tops lightly browned. |

Notes: My Grandma Ruby made the best Raisin filled cookies. This recipe is as close to hers as I can get from a magazine recipe. My Dad loved hers and mine both. My family loves it when I make these.
