4 sheets of Puff Pastry (thawed according to instructions on the packet)
2 1/2 cups Frozen Spinach, thawed and dried
1/2 Onion, finely diced
1-2 of Garlic, minced
1 tbsp Olive Oil
1 cup Ricotta
1 cup Feta, crumbled
Salt and pepper, according to taste

Cut pastry strips into 9 squares.

Make filling
Thaw frozen spinach and squeeze out as much water as possible. I use a dish towel.
Sauté onion and garlic in a Tblsp of oil then add spinach, ricotta and fold in the feta. Add salt and pepper.
Then add rest of ingredients.

Place one square of puff pastry into each muffin cup. Add a spoon of filling.
Take 4 corners and pinch to form the puff.
Melt 2 Tblsp of butter and brush tops.

Bake 400 for 20 minutes
