Ingredients: 2 green bell peppers, seeded and chopped 1 red bell peppers, seeded and chopped 10 ajies dulces peppers, tops removed & seeded, if you like 3 medium tomatoes, chopped 4 onions, cut into large chunks 3 medium heads garlic, peeled 25 cilantro stems (with leaves) 25 recao (culantro) leaves with stems 1 tablespoon salt 1 tablespoon black pepper
**NOTE** If you cannot find ajies dulces peppers, you can substitute with 1 or 2 cubanelle peppers

Directions:In a food processor, combine green peppers, red peppers ajies dulces (or cubanelles), tomatoes, onions, and garlic. Add cilantro, recao (culantro), salt, and pepper. Process to the consistency of semi-chunky salsa (not watery) or oatmeal.. Place in a resealable plastic freezer bag, and use as needed, or freeze in portions. |

Notes: Sofrito literally translates to "lightly fried" most likely because it is sauteéd, or lightly fried in every recipe for which it is used. Sofrito is a fragrant blend of herbs and spices used to season countless dishes, such as stews, beans, rice, alcapurrias, and meats. It is the base for most Puerto Rican dishes.
**TIP** I like to make in large batches, freeze into individual cubes (using an ice tray) of about 2 tablespoons each, then place cubes in ziploc bags to be stored in freezer for easy use.
