Ingredients: 2–3 - cucumbers, halved lengthways, watery centres scraped out and cut into 2cm pieces (700g) 2 - garlic cloves, crushed 2 tsp - rice vinegar 3 tbsp - lime juice 3 tbsp - sunflower oil 2 - spring onions, finely sliced at an angle ½ tbsp - black sesame seeds, lightly toasted flaked sea salt

Directions:Put the cucumber into a bowl with the garlic, vinegar, lime juice and 3 teaspoons of flaked sea salt. Mix to combine, using your hands to lightly crush the cucumber pieces. Gently heat the oil in a small saucepan until warm, about 2 minutes, then pour over the cucumber pieces. Set aside to marinate for 30 minutes or up to 2 hours. |

Tahini & Soy Dressing |

Ingredients: 60g - tahini 2 tbsp - soy sauce 1½ tbsp - mirin (or maple syrup) 1½ tbsp - rice vinegar

Directions: |
Directions:Whisk all the ingredients for the dressing together with 1 tablespoon of water until you get a very smooth sauce (it will seize a bit at first, but will then become very smooth). Pour the dressing on to a large plate with a lip, so that it naturally pools into a circle. Drain the cucumbers very well, discarding the liquid, and pile on top of the sauce. Finish with the sesame seeds and spring onions and serve at once. |
