Ingredients: 1 (15 ounce) can black beans, drained 2 cups cooked brown rice 1 tablespoon oat bran ¼ cup finely chopped onion ¼ cup finely chopped canned beets 2 Tablespoons minced prunes 2 teaspoons beet juice, if needed 1/2 teaspoon ground cumin 1 tablespoon paprika Black pepper Kosher salt

Directions:1) In a large bowl, mash beans. 2) Stir in 3 tablespoons of the sauce mixture (reserving remaining for brushing). 3) Add remaining ingredients. 4) Mix well and form into four patties. 5) Brush both sides with glaze and chill. 6) Heat olive oil in a cast iron or non-stick skillet over medium. Grill burgers for 2 minutes on one side. Turn and brush with additional glaze. Cook for an additional 2 minutes. 7) Add cheese, cover and cook until melted. |
