1 lb raisins (use fewer if desired)
1½ cups sugar
1½ cups water (or 1 cup water and ½ cup sherry)
¼ cup butter
2½ cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
½ tsp cloves
½ tsp allspice
1 pkg pitted dates, cut up
1 lb mixed fruits
2 eggs, beaten
candied pineapple
candied cherries
grated rind of 1 orange
grated rind of 1 lemon
nuts

Directions:
Directions:
Preheat oven to 300º. (Yes, 300º.)
Bring raisins, sugar, and water (or water and sherry) to a boil.
Remove from heat and add butter.
Sift flour with baking powder, baking soda, and salt.
Beat eggs, add to wet ingredients.
Add dry ingredients, spices, fruits, grated rinds, nuts.
Bake in a 300º oven for 1½ - 2 hours.**

**Check cake at about 1 - 1¼ hours. Internal temperature of cake should be 195º - 209º when done.
