2 pounds Italian link sausage, casing removed
½ small onion, diced
14 pieces (8oz.) Manicotti pasta, uncooked
3 cups (about 28 oz. jar) spaghetti sauce
¾ cup grated Parmesan cheese
2 eggs
¼ cup dry breadcrumbs
2 teaspoons dried parsley flakes
1 teaspoon Italian seasoning
¼ teaspoon garlic powder

In a large skillet over medium heat, cook sausage and onions until thoroughly cooked; drain. Remove from heat and let cool for 10 minutes.

Cook pasta according to package directions; drain. Lay flat on foil to cool.

Preheat oven to 350º.

Spread a thin layer of the spaghetti sauce on the bottom of a 13x9-inch casserole/baking dish. Stir ½ cup parmesan cheese, eggs, breadcrumbs and seasonings into the sausage mixture until well blended. Fill each pasta tube with about ¼ cup sausage mixture, place in the baking dish. Cover pasta with remaining sauce and sprinkle with remaining parmesan cheese. Cover with foil and bake for 35 minutes or until hot and bubbly.
