2 c. all purpose flour +2 tsp. for coating apples
1 1/2 tsp. baking powder
1/2 tsp.salt
2 tsp. cinnamon +1 tsp. for coating apples
2 c. diced apples
1/2 c. unsalted butter at room temperature
1 c. granulated sugar
2 large eggs
2 tsp. vanilla extract
1/2 milk

Topping:
1/2 c.butter, melted
1/4 c. granulated sugar
1/4 c. cinnamon

Directions:
Preheat oven to 375 degrees. Line or grease muffin tins.
Sift together 2 c. flour, baking powder, salt and 2 tsp.cinnamon in medium bowl and set aside.
Mix 2 tsp. flour and 1 tsp. cinnamon in separate bowl. Toss diced apples with mixture to coat apples. Set aside.
Cream together butter and sugar until light. Add eggs, one at a time, beating well after each addition. Mix in vanilla.
Gently fold in flour mixture, alternating with milk. Stir until just combined. Fold in diced apples. Scoop mixture into prepared muffin tins, filling 2/3 to 3/4 full. Bake until a toothpick or skewer inserted in the middle comes out clean - about 30 minutes.

Prepare topping while muffins are baking by melting butter and allowing it to cool slightly. Pour butter into a separate bowl (sized to allow dipping of muffin tops if you want). Mix together granulated sugar and cinnamon in separate bowl and set aside.

Once muffins have baked, remove from oven and allow to cool slightly in muffin tin. Then remove each muffin and brush the butter on with a pastry brush or dip into the melted butter and then dip in cinnamon sugar mixture. Place on a plate to finish cooling..

I found it easier to use the pastry brush to brush the butter on the top. I also liked these proportions of cinnamon but you can adjust the topping recipe to your liking.
