1/2 c softened butter
1/2 c packed brown sugar
1/2 c granulated sugar
2 large eggs
2 tsp vanilla
1 c mashed ripe bananas (about 2 - 2 1/2 bananas)
1 c flour
1/2 c old fashioned oats - ground into a powder
1 tsp baking soda
2 1/2 tsp baking powder
3/4 tsp salt
1/2 c sour cream
1/2 - 3/4 c toasted chopped pecans or walnuts

Preheat oven to 350º. Spray loaf pan with non stick spray or line with parchment paper. Toast nuts so that they can cool before adding to batter. Sprinkle nuts on dry baking sheet and bake at 350º for 5-7 minutes stirring every 2 minutes. In bowl of stand mixer beat butter until it is smooth, scraping the sides of the bowl. Add sugars and cream together for about 2 minutes until light and fluffy. Add eggs and vanilla beating well. In a small bowl, mash bananas. Add 1 c flour to the bowl but do not stir yet. Blend oats into a fine powder. Add oat flour, baking powder, baking soda, and salt. Stir into wet ingredients until just incorporated. Fold in sour cream and nuts. Pour batter into prepared pan and smooth out top. Bake for 55-65 minutes.
