Ingredients: 1 c warm water 1 tsp active dry yeast 3 Tbsp cranberry juice cocktail frozen concentrate thawed 1 Tbsp Vegetable Oil 2 1/2 c bread flour + additional for kneading 1/2 c finely minced sweetened dried cranberries 1/3 c finely chopped walnuts 1 tsp salt 4 qts water 1/4 c sugar

Directions:Dissolve the yeast in warm water. Make sure the water is warm not hot or you will kill the yeast. Add the cranberry juice and oil. In another large bowl, combine flour with cranberries, walnuts and salt. Mix the flour into the yeast with a large spoon and then use your hands to bring the dough together. Continue kneading adding up to an additional 1/4 c a little a time when the dough gets sticky. Knead for 10 minutes. Form the dough into a ball, store in a covered bowl for 30 minutes. After the dough has rested divide dough into 6 equal portions. Form bagels by rolling dough into a ball. Poke your thumbs through the middle of the dough ball then stretch the dough out a spin around your thumbs to create a donut shape. Place formed dough on greased baking sheet. Cover and set in a warm place for 30 minutes. When the bagels have rested for 30 minutes, preheat oven to 400º . Combine water and sugar in dutch oven over high heat. When water boils, drop bagels into water 2 or 3 at a time for 2 minutes. Flip the bagels after 1 minutes. Drain excess water off bagel and place on parchment paper covered baking sheet. Bake for 28-32 minutes. |
