1 tbsp Olive Oil
4 cloves garlic, finely chopped
3 strips lemon zest (thinly sliced)
1/2 jar (15.5 oz) Salsa
1 can Tomato Sauce
20 large Shrimp, peeled and deveined
2 cups baby Spinach
1/4 cup crumbled Feta

Directions:
Directions:
1. Heat oil, garlic and lemon zest in large skillet on medium heat until beginning to brown, about 1 min.

2. Add 1/2 jar of salsa, tomato sauce and bring to a simmer. Nestle shrimp into salsa mixture and cook, covered for 3 min.

3. Fold in 2 cups of spinach and cook until just beginning to wilt and shrimp are opaque throughout, 1 to 2 min more.

4. Sprinkle with feta and serve.
