3 large boneless, skinless chicken breasts, cut into cutlets
½ teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons all-purpose flour
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, crushed
1 cup chicken stock
1 cup heavy cream
½ cup parmesan cheese, grated
1 teaspoon chili flakes
¼ teaspoon oregano
¼ teaspoon thyme
⅓ cup sundried tomatoes, chopped
1 tablespoon fresh basil leaves

Directions:

Season chicken generously with salt and pepper. Then, submerge in flour and shake off any excess.

Heat olive oil and melt the butter in a large skillet over medium heat.

Add chicken to skillet and cook until they have a nice golden brown color on each side, about 4-5 minutes per side. Remove to a plate and cover with foil.

Add garlic to same skillet and sauté until fragrant. Add chicken stock, scraping any brown bits that got stuck to the bottom of the pan with a wooden spoon.

Turn heat down to medium-low and add heavy cream, followed by the parmesan, to skillet. Allow sauce to simmer for a few minutes. Then, add chili flakes, thyme, and oregano. Add more salt and pepper, to taste. Add sundried tomatoes and return chicken to skillet with the sauce and simmer a few more minutes, until the sauce has thickened.

Garnish with chopped basil and serve over pasta or rice!
