½ cup sugar
2 ½ tablespoons coarse sea salt, pulsed gently in a food processor
freshly ground black pepper, to taste
16 ounces salmon, cut into 4 fillets, with skin
olive oil

Directions:
Directions:
Preheat broiler to 450º.

Mix together sugar, salt, and black pepper into a shallow bowl. Dip each salmon fillet into mixture and properly coat them.

Heat some olive oil in a pan over medium heat. Place fillets into the pan, skin-side down. Sauté five minutes.

Flip each fillet onto the other side and sauté another 2-3 minutes. Sprinkle more sugar onto salmon fillets.

Place pan into oven, allowing it to broil about 5-10 minutes. Allow salmon to properly cool before peeling off skin and serving.
