1 ¼ pounds chicken breasts, boneless, skinless, and cut into 1-inch chunks
¼ cup cornstarch
salt and pepper to taste
¼ cup vegetable oil
¾ cup orange marmalade
¼ cup low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
½ teaspoon garlic, minced
1 tablespoon sesame seeds (optional)
2 tablespoons green onions, sliced (optional)
rice, cooked, for serving (optional)

Directions:

In a medium bowl, add the chicken, cornstarch, salt, and pepper. Toss to combine and evenly coat the chicken.

In a large pan on the stove-top over medium-high heat, heat the vegetable oil. Add the chicken in a single layer in the pan and cook until each side is browned, about 3-4 minutes per side. If you do not have enough space in the pan, cook the chicken in batches.

Grease the pot of a slow cooker. Add the chicken to the slow cooker.

In a small bowl, whisk together the orange marmalade, rice vinegar, soy sauce, sesame oil, and garlic. Pour the sauce over the chicken and gently stir to coat evenly.

Cook on low for 2-3 hours.

Top with the sesame seeds and green onions, and serve over rice!
