2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. white button mushrooms, sliced
2 cloves garlic, minced
1 ½ pounds boneless, skinless chicken breast, cut in strips
¾ teaspoon kosher salt
½ teaspoon black pepper
4 oz. regular or reduced-fat plain cream cheese
¼ cup low-sodium chicken broth
½ cup shredded mozzarella cheese

For Serving:
steamed rice
3 tablespoons chopped, fresh parsley, if desired

Directions:

Heat a large skillet over medium heat, then add oil. Add the mushrooms and onions and sauté for 4-5 minutes. Add the garlic and sauté for 30 seconds.

Slice the chicken into strips and season with salt and pepper. Put the heat to medium-high, and add the seasoned chicken to the pan. Sear the chicken for 6-8 minutes, turning them over once, until golden brown.

Add in the chicken broth and cream cheese and stir until the cream cheese is melted fully and combined.

Sprinkle mozzarella over the pan, cover with the lid, reduce the heat and cook for 2-3 minutes, or until the chicken is fully cooked. Use the salt and pepper to season to taste.

Serve the mushrooms and chicken over steamed rice. Garnish with the parsley, if desired.
