2 c. bean soup mix
2 T. vegetable oil
1/2 lb. ham or beef shanks
1/2 c. chopped onion
1 sliced carrot
7 c. water
4 bouillon cubes
1/4 tsp. dry mustard
2 T. parsley
Salt & pepper

Directions:
Directions:
Soak beans according to package. Heat oil in 4-quart pot. Add meat and brown well; move aside. Sauté onions and carrots. Add soaked beans, water, bouillon cubes, mustard and parsley. Bring to full boil, reduce heat and simmer 1 to 2 hours. Remove bones, cut meat from bones; return meat to soup.
