1 can sliced beets, drained (Del Monte)
1 c. apple cider vinegar
1 c. sugar
1 red or Vidalia onion, sliced thin
Salt

Directions:
Directions:
Open and drain beets. Sprinkle 1/8 teaspoon salt over beets. Slice onion and add to beets with vinegar and sugar. Place in covered container and refrigerate overnight. Serve as pickles or on lettuce as a salad.
