1-1/2 pounds pears
1 tablespoon lemon juice
6 cinnamon sticks
1/4 teaspoon ground nutmeg
1 teaspoon vanilla
1/4 cup water

Peel, core, and coarsely chop the apples and the pears. Combine the apples and the pears with the remaining ingredients in a saucepan. Bring to a boil over medium-high heat and cook until softened. Use an immersion blender to process the mixture to your desired or preferred consistency.

Prepare your water bather, jars, and lids.

Ladle the hot sauce into hot jars leaving 1/2-inch headspace. Remove air bubbles and adjust headspace if necessary. Wipe rim of jars. Center the lids on the jars and then screw down the ring until you feel resistance and then increase to finger tight.

Place your jars in the water bath, ensuring they are completely covered with water. Bring to a boil and process both pint and quart jars for 20 minutes. Remove the canner lid and wait 5 minutes before removing jars.

I created this particular recipe after reading several different recipes that just didn't sound quite right. I have combined different types of pears and apples each time I've made it, typically using 2 or 3 different types of pears (Red, Bosc, and Anjou, for example) along with 2 or 3 different types of apples (McIntosh, Granny Smith, and Gala) which seems to provide the perfect balance of sweet and tart.
