½ stick butter, browned gently in small saucepan
½ c. maple syrup
2 Tbsp. brown sugar (lt or dk)
1 ½ tsp. vanilla extract

½ c chopped, sliced or slivered almonds (reserve)
½ c chopped pecans (reserve)
1 c shredded sweetened (or unswt) coconut (reserve) (optional)
3 c. old-fashioned rolled oats
½ tsp sea salt
1 tsp cinnamon

Gently brown butter in small/med saucepan. Remove from heat and immediately add maple and brown sugar. After brown sugar is dissolved (may need to add a bit more heat), cool slightly and add vanilla.

Meanwhile mix oats, cinnamon, salt and toss it with the syrup mixture, cleaning the pan with it.

Bake on parchment (or silicone baking sheet) covered pan with sides at 350º, stirring every 10 minutes. After first 10 minutes, ADD reserved nuts and coconut, stirring gently. Total baking time may be 30-45 minutes, be careful not to let it become too brown.

We like chunky granola, when removing from oven press it into the parchment and then don't touch until fully cool, Break up to desired chunkiness and store in airtight clean jar (only reuse pickle jars if you like garlicky granola-don't ask how I know this!)

Please customize this to your taste with the nuts/coconut, etc. Original recipe called for craisins which I find get too hard.
