1 sheet of puff pastry, thawed
1 wheel of Brie
Jam —apricot, fig, orange marmalade (even cranberry sauce would be ok)
1 egg yolk
4 Tbsp. heavy cream or half and half

Directions:
Directions:
Roll out to be able to enclose the brie.

Put the brie in the center of the pastry. Poke holes in the top with a fork. Spread jam on the top - not too thick but not too thin.

Pull the edges of the pastry up around the brie. Use cotton twine to hold it all together.

Put in the fridge for at least an hour (if you can’t do it this long, thats ok but try to give it at least 15 minutes.

Preheat oven to 400º. Put the brie on a parchment lined pan or sheet.

Whisk egg and cream. Brush on pastry. Bake for 35-40 minutes. If your oven runs hot you may want to turn the temp down a bit to keep the pastry from charring.

Serve with crackers.
