"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
10 large sheets phyllo dough (or have at least one package of thawed frozen phyllo dough - the recipe says 50 layers)
1 pound chopped walnuts
2½ pounds unsalted butter

Simple Syrup:
2 cups sugar
1½ cups water
Squeeze of lemon juice

Directions:
Directions:
Melt butter ahead of assembly.

Preheat oven to 350º

Cut phyllo dough to size of large baking dish. Butter baking dish VERY well. Put 5 layers of dough in dish and brush with melted butter. Add next stack of 5 layers, brush with melted butter AND sprinkle chopped walnuts. Continue layering in this pattern: buttering every stack of 5 and sprinkle walnuts every other stack of 5.

BEFORE baking, cut dough in pan diagonally about 1-1½ inches apart to form diamonds. Pour a little butter onto each diamond and bake at 350º for 15 minutes.

Then pull out pan halfway and pour in the rest of the butter onto each diamond. It should make "sizzley" sounds. Bake again for 25-30 minutes until browned. If you want it less browned, cover pan the last 10 minutes.

When the pan is out of the oven, drain as much butter as possible. Then remove one piece from a corner, leave pan in a tilted position for 15 minutes and keep removing the excess butter.

Make simple syrup before assembly - cook sugar and water together, add squeeze of lemon juice.

Add the lukewarm syrup to the lukewarm baklava in the pan. Enjoy!

Personal Notes:
Childhood! Every holiday dinner had this. It is very similar to baklava - the nuts and syrup are different.

It is very laborious - the actual recipe calls for hand rolled homemade dough! I will tell you a 9x13 inch pan is not big enough - I tried it once and the butter overflowed and caught fire! (Maybe if making a half recipe).

Note: keep the phyllo from drying out while assembling by placing a damp clean dish towel over it.
