Cake:
2 sticks margarine
2 cups sugar
2 eggs
1 cup sour cream
1 1/2 tsp. vanilla
1 3/4 cup flour
1 tsp. baking powder
1/4 tsp. salt

Topping:
1 tbsp. cinnamon
3 tbsp. brown sugar
1/2 cup chopped walnuts

Directions:
Directions:
1. Cream margarine and sugar until fluffy. Beat in eggs.
2. Fold in sour cream and vanilla.
3. Add flour, baking powder, and salt.

Spoon 1/2 batter into greased tube spring pan. Sprinkle half of topping on batter. Add remaining batter, then remaining topping.

Bake at 350 degrees for 1 hour. Let it cool completely in pan before removing.

It's better if you bake this a day ahead.

Ellie baked this coffee cake every time she needed to visit the funeral home. It is delicious and was her way of offering comfort to her loved ones. We bake one for every Christmas morning to remember her!
