Cookie:
2 sticks of butter
1-1/4 cups sugar
1 egg
1 TBS fresh lime juice
1-1/2 TBS lime zest
1/2 tsp salt
1/4 tsp baking soda
1-3/4 cups flour
1/2 cup corn meal
Glaze:
1 cup powdered sugar
2 TBS lime juice
Zest from 1 lime, finely chopped (optional)

Directions:

Heat oven to 350 degrees
Cookies:
Using the paddle attachment on your mixer, cream butter and sugar in large mixing bowl on medium-high speed until fluffy
Add egg, lime juice, and zest, then mix until thoroughly combined
Sift four, salt, and baking powder into butter mixture
Add corn meal and mix on low just until combined
Chill dough until firm enough to form ping pong size dough balls
Place cookies 2" apart on cookie sheet and chill until firm
Remove from fridge, flatten balls with your palms and lightly flour to prevent sticking
Bake for 10-12 minutes or until edges are golden brown, after 2 minutes remove to cooling rack and brush with glaze
Glaze:
Whisk all ingredients until there are no lumps
Allow glaze to set before serving
