2 tablespoons extra-virgin olive oil
2 1/2 pounds boneless stew beef
3/4 teaspoon salt
1/2 teaspoon black pepper
2 sweet onions, chopped
6 medium carrots, peeled and cut to 1/2-inch pieces
3 stalks celery , cut into 1/2-inch pieces
2 cloves garlic , minced
3 tablespoons all-purpose flour
1/4 cup butter
3 1/2 cups beef broth ( use beef flavored Better-than-broth and make to just over double strength)
1/2 to 3/4 cups red wine
3 tablespoons Worcestershire sauce
1 small can tomato paste
8-10 baby potatoes, cut/ quarter into 2 inch-ish pieces
parsley for garnish *optional

Directions:

Warm oil in a heavy bottomed pot over med-high heat.
Pat beef dry and sprinkle with the salt and pepper.
Add beef to the pot and brown well all over.
Stir in the onion, carrots, and celery; saute for 5 minutes Add garlic and cook for 30-60 seconds until fragrant.
Slowly pour in the double strength beef broth. Add the Worcestershire and tomato paste; stir.
Liquid level should just cover the beef.
Bring to simmer, then adjust heat to low / medium-low so it’s a gentle simmer. Cover with lid, cook for 1 hr 45 minutes, until the beef is tender.
When the timer goes off, Microwave the butter until just melted Add flour and stir to make a slurry. Pour slurry into pot and stir.
Add in the potatoes; simmer for another 30 minutes (without the lid) until the potatoes and beef are very tender, the sauce has reduced and thickened slightly.
Ladle into bowls, garnish with parsley if desired. Enjoy with crusty bread.

Don’t be deterred by the number of ingredients, this is a really easy and super delicious stew. Don’t omit the red wine as it gives great flavor to the meat.
