1 cup flour
1 cup sugar
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
¼ tsp. cinnamon
2 eggs, beaten
1 cup canned pumpkin
½ cup oil
½ cup pecans, chopped
⅓ cup mini chocolate chips

Grease 15 (2½") muffin cups or 6 (3¼") jumbo muffin cups or line with paper cups.

In one bowl combine dry ingredients.

In another bowl, combine the eggs, pumpkin and oil.

Make a well in the dry ingredients. Add the egg mixture all at once and stir until just moistened. Fold in the nuts and chocolate chips.

Spoon into the tins (⅔ full). Bake at 350º for 20-25 minutes or until toothpick is clean. Cool on wire racks for 5 minutes. Remove from tins.

These are great as muffins. Top with chocolate frosting to make a tasty cupcake. Can also be baked in loaf pans to make a moist tea bread .
