Salad:

1 1/2c uncooked quinoa
2c cooked chicken, shredded
1/2c peeled/chopped carrots
1/2c shelled edamame
1/2c chopped red bell pepper
4 chopped green onions
1/2c chopped, roasted peanuts
1/2c freshly chopped cilantro

Sauce:

4tblsp sweet chili sauce
2tblsp rice vinegar
1tblsp canned coconut milk
1tblsp light brown sugar
2 tblsp creamy peanut butter
2 garlic cloves, finely minced
1 lime juice (2tblsp)
pinch of ground ginger

Directions:
Directions:
- Prepare quinoa (1c quinoa to 1 1/2c liquid)
- Combine all sauce ingredients
- Mix sauce and cooked quinoa
- Stir in chicken
- Stir in veggies
