1 9 inch unbaked pie shell
1 3/4 cups canned pumpkin
3/4 cup brown sugar firmly packed
3/4 tsp salt
1 tsp cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
2 eggs
1 cup evaporated milk
1/2 cup water

Directions:
Directions:
Heat pumpkin over low heat for 10 minutes, stirring frequently. Heat oven to 450 degrees. Combine sugar and next 4 ingredients. Add to pumpkin. Stir well. Beat eggs well with a fork. Add evaporated milk and water to eggs, then add pumpkin mixture. Bake 15 minutes. Reduce heat to 300 degrees and bake 45 minutes until done. (knife inserted in the middle will come out clean)
