Ingredients:  
1kg mushrooms (I use chestnut)⁣
▪️2 red onions, diced⁣
▪️4 garlic cloves, crushed⁣
▪️3 tbsp olive oil⁣
▪️2 tsp paprika ⁣
▪️2 tsp Dijon mustard ⁣
▪️Juice of 1 lemon⁣
▪️2 cans coconut milk ⁣
▪️Salt & pepper⁣

Roughly slice your mushrooms ⁣
2️⃣ To a large shallow casserole pot (see tips below about why) add the mushrooms + onion + garlic + olive oil and fry until the mushrooms soften⁣
3️⃣ Now add the paprika + Dijon mustard + lemon juice + coconut milk + salt & pepper and mix ⁣
4️⃣ Cook on a high heat for 15-20 minutes until it thickens ⁣
