1 cup of ricotta cheese
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black ground pepper
4 boneless, skinless chicken breasts
1/2 tsp garlic powder
1 Tbsp extra virgin olive oil
1 cup crushed tomatoes
1 small can of green chilies, drained
1 cup mozzarella cheese

Directions:

In a blender, combine ricotta with the oregano, salt and pepper.
Rub the chicken with the garlic powder. Heat oil in a large skillet over medium high heat. Add the chicken breasts and cook for about 12 minutes on each side. Place the chicken breasts, side by side in a buttered baking dish and allow to cool.
Preheat oven to 350 degrees.
Mix tomatoes and green chilies together. Spoon 1/4 cup of cheese mixture and 1/4 cup of tomato mixture onto each chicken breast. Top each with some mozzarella cheese. Bake for 20 minutes.
