4 C all-purpose flour
1/2 tsp salt
1 tsp baking soda
2/3 C shortening
1 tsp vanilla extract
2 C brown sugar, packed
Filling:
2 tsp flour
1 C boiled water, hot
1 C brown sugar
1 C dates, chopped
1 C chopped nuts, walnuts or pecans

Directions:
Directions:
Combine salt and baking soda into flour and mix well, set aside. Using an electric mixer, Cream shortening, and sugar together. Combine with flour mixture, add vanilla extract to make dough.
Filling: combine sugar and boiling water. Gradually add flour, mix well, then add chopped dates and nuts and stir together.
Preheat the oven to 350º. Roll the dough to the thickness of pie crust and cut out 2-inch rounds with a cookie or biscuit cutter. (You will need two rounds for each cookie.) Put a teaspoon of filling in the center of one round of dough. Be careful not to over-fill the cookie. Cover with another round of dough and seal the edges using the tines of a fork. Place on a parchment paper-lined, or greased cookie sheet and bake about 10-12 minutes or until done and browned.
