Meringue

4 egg whites
½ tsp white sugar
⅛ tsp salt
1 cup sugar (skimp)
1 tsp vanilla

Filling

4 egg yolks
½ cup white sugar
½ cup lemon juice
¼ cup crushed pineapple with juice

Directions:

Meringue

Beat until very stiff, then gradually add the sugar and vanilla. Put in slightly greased 10 or 11 inch pie tin or 9x9 pan. Bake at 275 degrees or 1 ½ hours.

Filling

Cook over boiling water until thick. Cool and spread on cooled torte.
Whip 1 cup cream and add 2 tbsp sugar and 1 tsp vanilla. Sprinkle with flaked coconut. (I usually brown the coconut) Keep refrigerated until ready to use.

May be made the night before serving
