3 russet potatoes
2 T. olive oil, divided
4 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
2 T. green onions or scallions, chopped (if desired)

Directions:
Scrub the potatoes to ensure they are clean. Rub each of the potatoes with olive oil. Place each potato in the air fryer basket. Air fry for 35-45 minutes on 400º until soft. You can test by piercing the potato with a fork. Cooking time will vary based on the weight of the potatoes. When cooked and tender, remove the potatoes from the air fryer and cool completely. Slice each potato in half. Use a spoon and scoop out the inner flesh. Reserve ¼ of an inch of the flesh along the bottom and sides of the potato. You want each skin to still have a base to hold the toppings. Drizzle with olive oil and then season with salt. Top each potato with the crumbled bacon and shredded cheese. Return to the oven and broil for 2-3 minutes until the cheese has melted.
