1 - pkg 100g ground almonds
¾ cup Splenda (or sugar)
⅔ cup cornmeal
2 tsp Baking Powder
½ tsp salt
½ cup butter
¾ tsp almond extract
3 eggs
½ cup light sour cream
¾ cup blueberries
½ cup whipping cream

Directions:
Directions:
1. Whisk together ground almonds, all but 2 tsp of the Splenda (sugar), cornmeal, BP,
and salt.
2. In separate bowl, beat butter with extract. Beat in eggs, one at a time. Beat in sour cream. Stir in almond mixture. Fold in blueberried.
3. Pour into greased and parchment papter line 9 inch round cake pan.
4. Bake at 350º for 35 minutes. let cool for 10 minutes and remove from pan.
5. Whip cream and fold in 2 tsp Spenda and serve a dollop over cake.
