1C shortening ( I use butter flavored Crisco)
1 1/2 C sugar
3 eggs
3C all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 9 oz pkg CONDENSED mincemeat
1C pecans or more as desired

Directions:
Directions:
beat shortening and sugar in a large bowl with mixer on high until fluffy.
blend in eggs
stir together flour, baking soda and salt
gradually blend flour mixture into shortening mixture.
crumble mincemeat and stir into cookie dough with pecans
drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheet (I use a
silicone baking pad or line the cookie sheet with parchment paper).
Bake 8-10 minutes or until lightly browned
Cool on a rack.
