1 3-4 pound Chuck Roast (a lean one)
1 T oil

Directions:
Directions:
Brown roast in a skillet with 1 T oil, (brown or sear on all sides. I use tongs to turn it.) Be careful not to drop it into the grease, it will splatter and burn you. Place it in a Dutch Oven pot. Add a cup or so of water. Put in a 300º oven for about 2 or 3 hours. The last hour put in the prepared veggies. Peel and half potatoes to serve the number of people you have. Peel and cut carrots into about 4 pieces. Cut a large onion in 4th. Keep veggies in water until you are ready to put the veggies in with the roast. Place all veggies in the pot and put them back in the oven for the last hour of cooking the roast.
