Dough
2 cups + 2 Tbsp. bread flour
1⅛ tsp. instant yeast
¾ tsp. salt
1 Tbsp. olive oil
¾ cup water warmed for 1 minute in microwave.
*extra olive oil to coat bowl




Marinara Sauce
1 (28 oz.) can whole tomatoes
2 cloves garlic
1 tsp. oregano
2 Tbsp. olive oil
1 tsp. salt

Pizza
4 Tbsp. olive oil
12 to 16 ounces fresh mozzarella log / ball (sliced or shredded)

Directions:
To make Dough: Coat large bowl with olive oil.

Add flour, yeast and salt to food processor, mix to combine (about 5 pulses). Add 1 tbsp olive oil to food processor. Turn food processor and pour in water slowly.
Continue mixing for approximately 30 seconds until dough ball is formed.

Wait for 2 minutes, then turn on food processor for another 30 seconds (helps gluten formation).

Take dough out and knead for up to 1 minute on flour covered surface until smooth.

Place dough ball in bowl; roll ball around so that it is lightly covered in olive oil. Cover bowl with plastic wrap and let rise at room temp for 1½ hours (should double in size).

To make the Marinara Sauce: Combine all ingredients in a food processor and pulse until well chopped (not pureed).

To make the Pizza: Preheat oven to 500º.

Split dough in half.

Add 2 tablespoons olive oil to cast iron skillet and coat pan, heat.

Roll dough into 11" circle on a floured surface.

Put dough in a cast iron pan. Add ½ cup marinara sauce. Top with half the mozzarella cheese. Cook pizza on medium high for 2 to 4 minutes.

Cook in oven for 7 to 10 minutes.

Remove pizza and repeat steps to make second pizza. Be careful, cast iron skillet will be hot!
