1 small, sweet onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 14˝-ounce can tomatoes, diced and drained, preferably San Marzano
1˝ cups fresh Roasted Green Chiles, peeled and chopped, (see recipe for Roasting Chiles)
˝ teaspoon salt
˝ teaspoon pepper
2 cups Queso Asadero, (see Cook's Note)
2 cups half and half

Directions:
Directions:
1). Sauté the onion and garlic in the olive oil until soft. Add the tomatoes, green chilies, salt and pepper and simmer for 15 minutes.

2). Add the cheese, stirring until it begins to melt. Stir in the half and half.

3). Serve with tortilla chips or warm flour tortillas.

Cook's Note: If you cannot find Queso Asadero which is a Mexican white cheese, you can substitute Monterey Jack cheese.
