Ingredients:
Ingredients:
4½ tsp. quick-rise (instant) yeast
2 cups warm water (115º)
2 tsp. sugar
5 cups bread flour
¼ cup olive oil
1 tsp. salt

Directions:
Directions:
In a small bowl combine yeast, water, and sugar, and let sit for 10 minutes. The liquid should be foamy and bubbly, indicating that the yeast is alive.

Pulse flour, and salt in a food processor until combined. With the food processor running on low, slowly pour in the oil and yeast mixture and process until dough forms into a shaggy ball.

Dump the dough onto a floured surface and knead until smooth. Place dough in a greased bowl. Cover the bowl with plastic wrap and let rise for about 30 minutes, until the dough has doubled in size.

Remove the dough to a lightly floured surface and divide into three even pieces. Shape each piece of dough into a ball.

The dough is now ready to be rolled out and baked, or ready to be frozen.

To freeze pizza dough, place the pizza dough balls into resealable plastic bags. Make sure that if you put multiple balls of dough in one bag, use parchment paper or wax paper to keep them separated.

To thaw, place the pizza dough in the refrigerator the morning before you want to make dinner, then roll and bake as usual.

To bake, preheat oven to 500º. Roll thawed (or freshly made) dough, top with favorite toppings and bake each pizza about 10 to 15 minutes.

NO FOOD PROCESSOR? Combine the flour, and salt in a large bowl. Whisk to combine, then drizzle the yeast mixture and oil into the bowl while stirring with a large spoon. Stir until all of the flour has been incorporated and the dough comes together, then proceed with the next step.
