½ large onion, cut through the stem (keep enough of the stem end to hold it together)
Cloves
12 peppercorns
1 bay leaf

20 oz. whole milk
4 oz. white bread crumbs
Salt
Nutmeg
2 Tbsp. butter

Directions:
Directions:
Stick the cloves into the onion. Be generous with the cloves.

Put the onion, peppercorns and bay leaf into a pot with the milk. Simmer for at least an hour. (You can turn it off and let it sit after an hour.)

When you are ready to prepare the sauce, strain the milk and return the liquid to the pan.

Heat the milk back up and add the bread crumbs bit by bit until the mixture is fairly thick, stirring all the time. The mixture will continue to thicken so don't add too many bread crumbs at first.)

Add salt and grated nutmeg to taste along with the butter. Stir until smooth, although will still be "bumpy". If it thickens too much add more butter, milk or even cream.
